Tips for Baking and Cooking....

Pies
Here is a great idea for a delicious tasting pie. If you have a baked pie shell and want to bake a chocolate or pudding pie....you may take a sliced chocolate bar or chocolate chips and place them on the shell.

Pour the warm pudding into the shell and let it melt the chocolate bar....creating a yummy chocolate bottom for the pie. The extra chocolate may be used for decoration.

Seizing
This happens when you are melting chocolate and it becomes dry, grainy, and hardens. If you do experience seizing....add a teaspoon of vegetable oil and stir until your chocolate becomes smooth.

Flour Hints
When a recipe calls for "sifted flour" and you are uncertain on the directions, read below for an explanation.
  • If the recipe says "3 cups of sifted flour".......means you have to sift the flour first, and then measure it.
  • If the recipe says "3 cups of flour", "sifted".......means you have to measure the flour first, and then sift it.

It is all right if you don't have a flour sifter because there are several different methods you may use.

1. Gently shake the bowl to bring air into the flour.

2. Using soup spoons....lift the flour into the air and let it fall back into your bowl.

3. First....stir the flour with a fork, then....sift the flour with a mesh strainer.
