Chocolate Cheesecake
Prep Time: 30 minutes
Ingredients for Crust:
2 cups of crushed chocolate wafers
6 tablespoons of melted margarine
3 tablespoons of sugar
Directions for Crust:
Combine all the ingredients together....mixing well. Press firmly into a pie pan. Bake in a preheated 325 degrees oven for 10 minutes. Let cool.
Ingredients for Filling:
24 ounces of cream cheese
1 cup plus 2 tablespoons of firmly packed light brown sugar
1 1/2 tablespoons of vanilla extract
9 ounces of melted semi-sweet chocolate chips
3 eggs
assortment of toppings: whipped cream, fruit, melted chocolate, etc.
Cook Time: 35 minutes
Directions for Filling:
Combine the cream cheese, vanilla, and sugar into a bowl. Blend thoroughly. Add the chocolate and eggs....beating well. Pour the mixture into the crust. Bake in a preheated 325 degrees oven for 35 minutes or until done. Let the cheesecake cool. Garnish with your favorite toppings. Yield: 6 servings
