Chocolate Shortbread
Prep Time: 30 minutes
Ingredients:
1 1/2 cups of all-purpose flour
3 tablespoons of Dutch Process cocoa
3/4 cup of softened butter
3/8 cup of sugar
1 teaspoon of vanilla extract
1/4 teaspoon of salt
extra sugar for coating
Cook Time: 3 hours
Directions:
Mix the flour and cocoa together thoroughly. In a separate bowl, combine the butter, sugar, vanilla, and salt. Stir until smooth. Add the flour mixture, blending well. Press into a greased 9" pan. Refrigerate at least 2 hours. Bake in a preheated 300 degrees oven for 1 hour or until done. Remove and sprinkle with sugar. Yield: 16-32 servings
