Chocolate Zucchini Cake



Prep Time: 50 minutes

Ingredients:
3 eggs
1 1/2 cups of sugar
1 teaspoon of vanilla extract
1/2 cup of vegetable oil
2 cups of all-purpose flour
1/3 cup of cocoa
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of cinnamon
1/4 teaspoon of salt
3/4 cup of buttermilk
2 cups of shredded zucchini
1 cup of chopped nuts
1/2 cup of raisins





Cook Time: 50 minutes

Directions:
Combine the eggs, sugar, oil, and vanilla into a bowl. Blend well. In a separate bowl....add the cocoa, baking powder, baking soda, cinnamon, and salt....blending until thoroughly mixed.
Pour the liquid mixture into the dry mixture and stir well. Slowly....add the buttermilk into the mixture. Stir in the zucchini, nuts, and raisins.
Beat until well blended.
Pour the mixture into a greased 13x9 cake pan.
Bake in a preheated 350 degrees oven for 50 minutes or until done.
Yield: 12 servings
