HIGH ALTITUDE FOOD PREPARATION
Water Boiling Temperatures:
A. Sea level is 212 degrees F.
B. 2,000 feet is 208 degrees F.
C. 5,000 feet is 203 degrees F.
D. 7,500 feet is 198 degrees F.
E. 10,000 feet is 194 degrees F.
Flour Adjustments:
A. 3,500 to 5,000 feet increase flour 1 tablespoon
B. 5,000 to 6,500 feet increase flour 2 tablespoons
C. 6,500 to 8,000 feet increse flour 3 tablespoons
D. 8,000 feet and over increase flour 4 tablespoons
Baking Powder Adjustments....for each teaspoon:
A. 3,000 feet reduce baking powder 1/8 teaspoon
B. 5,000 feet reduce baking powder 1/8-1/4 teaspoon*
C. 7,000 feet reduce baking powder 1/4 teaspoon
Sugar Adjustments....for each cup:
A. 3,000 feet decrease sugar 0-1 tablespoon*
B. 5,000 feet decrease sugar 0-2 tablespoons*
C. 7,000 feet decrease sugar 1-3 tablespoons*
Liquid Adjustments....for each cup:
A. 3,000 feet increase liquid 1-2 tablespoons*
B. 5,000 feet increase liquid 2-4 tablespoons*
C. 7,000 feet increase liquid 3-4 tablespoons*
***REMINDER....if unsure on your measurements when increasing or decreasing the ingredients....use the lowest measurement first and if that didn't work try the next measurement.
