Hot Fudge Cake
Prep Time: 20 minutes
Ingredients:
2 cups of all-purpose flour
1 3/4 cups of packed light brown sugar: set aside 3/4 cup
2 teaspoons of baking powder
1/4 cup plus 3 tablespoons of cocoa powder: set aside 1/4 cup
1 teaspoon of salt
1 cup of milk
4 tablespoons of melted butter
1 teaspoon of vanilla extract
3 1/2 cups of boiling water
Cook Time: 1 1/4 to 1 1/2 hours
Directions:
Combine the flour, 1 cup of sugar, 3 tablespoons of cocoa powder, baking powder, and salt into a bowl, mixing well. Blend in the milk, butter, and vanilla extract.
Pour the mixture into a greased 4 1/2 quart crock pot. Blend the remaining 1/4 cup of cocoa powder and 3/4 cup of sugar in a separate bowl. Sprinkle evenly over the mixture in the crock pot.
Pour in the boiling water, do not stir. Keep covered and cook on HIGH for 1 1/4 to 1 1/2 hours or until done. Let cool for 10 minutes then either scoop out or invert onto a serving platter. Optional: Sprinkle lightly with powder sugar or cocoa.
Yield: 6-8 servings
