Chocolate Mocha Pie



Prep Time: 30 minutes

Ingredients:
4 ounces of sweet chocolate chips
3 tablespoons of margarine
1 teaspoon of instant coffee
1/3 cup of sugar
1 cup of light corn syrup
3 eggs
1 teaspoon of vanilla extract
1 cup of chopped pecans
1 unbaked 9-inch pie shell
pecan halves--optional





Cook Time: 1 1/2 hours

Directions:
Mix the chocolate, margarine, and coffee in a saucepan on low heat. In a separate saucepan, combine the sugar and corn syrup, bring to a boil, and stir until the sugar is dissolved.
Reduce the heat and stir occasionally. Remove from the heat and pour the chocolate mixture into the sugar ingredients. Stir in the eggs, vanilla, and nuts, blending well.
Pour into the pie shell. Bake in a preheated 375 degrees oven for 45 minutes or until done.
Let cool. Garnish with the pecans and Coffee Topping.
Yield: 8-10 servings
