Molten Chocolate Cupcakes
Prep Time: 30 minutes
Ingredients:
4 tablespoons of margarine
1/4 cup of sugar
1 egg
5/8 cup of self-rising flour
1 tablespoon of unsweetened cocoa
2 ounces of a semi-sweet chocolate bar cut into squares
powder sugar: optional
Cook Time: 20 minutes
Directions:
Combine all the ingredients except the chocolate bar into a bowl. Beat until the mixture is smooth. Place paper baking cups in a muffin pan. Spoon half of the batter into the cups. Take a teaspoon and make an indentation in each cup. Place a small chocolate square into each indented chocolate. Spoon out the remaining batter on each cupcake. Bake in a preheated 375 degrees oven for 20 minutes or until done. If desired....garnish with powder sugar. Yield: 9-12 servings
