Peanut Butter Pudding Cake



Prep Time: 20 minutes

Ingredients:
1 cup of all-purpose flour
1 cup of sugar
1 ½ teaspoons of baking powder
2/3 cup of milk
2 tablespoons of vegetable oil
1 teaspoon of vanilla extract
1/2 cup of peanut butter
1/4 cup of unsweetened cocoa powder
1 cup of boiling water
chopped nuts--optional
vanilla ice cream--optional

Cook Time: 1 1/4 to 1 1/2 hours

Directions:
Mix the flour, ½ cup of sugar (save the other half of sugar), and baking powder into a bowl. Add the milk, vegetable oil, vanilla extract, and peanut butter, stirring well.
Pour the mixture into a greased crock pot. In another bowl combine the remaining sugar, and cocoa then stir in the water. Pour this mixture into the crock pot.
Cover and cook on HIGH for 1 1/4 to 1 1/2 hours or until done. Let cool for 10 minutes. Serve warm. Garnish with nuts.
Yield: 4 servings

Tip: This recipe makes a yummy fudge topping and may drizzle the topping over the cake.
